zucchini

for zucchini lovers: I threw this altogether a few years ago and its become a family favorite. Some of you might wanna try it. At the end of season you know those great big zucchinis that were left to grow too long? well........
One large zucchini cut in half lengthwise
scoop out the seeds
cut the zucchini out and shred it...leaving the skin intact...
1-2 lbs of hamburger
1 jar medium salsa
1 lg onion, chopped
bread crumbs
mix all of this with the zucchini and stuff the shells
I put both halves into a lasagne pan...
add 1 cup water to the bottom of the pan-- makes the skin tender
and cover the "zucchini boats" with spaghetti sauce...
bake for 1 hour and throw shredded cheese on top and leave in long enough for it to melt...about 20 minutes. Slice....
I serve it with crusty garlic bread...and salad with vinegar and oil dressing
This is sooooooooo good... we love it.
